Easy, Time-Saving and Delicious Steamed Rice in a Pressure Cooker
You only need to cook the rice for 3 minutes! Making rice is one of my specialties. Preparing the rice this way in a pressure cooker will give the rice a shiny finish and enhance the texture of each grain.
2 cups (slightly more for pre-washed rice, and 80% of that amount for freshly harvested rice))
To rinse the rice, add water, lightly stir, then drain the water.
Add again water, then wash the rice (this time, however, try not to touch the rice), then drain. Repeat until the water is clear (about 3-4 times).
Drain the washing water completely, add the listed amount of fresh, clean water, then soak for about 30 minutes.
Heat in a pressure cooker over high heat until the pressure gauge rises (or "clicks" into place) reduce to low heat for 3 minutes, then let rest to steam for 10 minutes without lifting the lid. Then you're all done.
Story Behind this Recipe
My mother saw the wife of an upscale restaurant owner wash rice on TV a long time ago.
Try not to touch the rice while washing it. For freshly harvested rice, reduce the amount of water.
