Easy & Delicious! Aubergine and Minced Meat Curry

Using milk and soy sauce adds mildness" and richness to this curry. Aubergine and minced meat are a match made in heaven.

Ingredients: 2~3 servings

Minced combined pork and beef
200 ~300 g
Aubergines - small Japanese type
3 tablespoons & 1 tablespoon
Shop-bought curry roux (This time I used House Java Curry")
1/2 pack
Water (follow the instructions on the packet of curry roux)
(700 ml for "Java Curry" roux.)
50 ml
Soy sauce
1 tablespoon
Soup stock cubes


1. Cut the aubergines into bite size rolling slices, and chop the onion.
2. Put 3 tablespoons of oil in a pan, stir fry the aubergines and transfer to a plate.
3. Add 1 tablespoon of oil in the pan and stir fry the minced meat and onions over medium heat. Then add the potatoes. (if you want to save time, microwave the potatoes before you stir fry.)
4. Refer to the packet of the curry roux used, add water to the pan. Add the soup stock cube and simmer until the potatoes are cooked thoroughly.
5. Meanwhile, skim the scum (optional). Dissolve the curry roux, then add milk and soy sauce.
6. Add the cooked aubergines.
7. It's done. You can eat it straight away, but let it rest overnight.

I made this dish because I wanted to use aubergines . With minced meat, you can taste meat in every bite. . I love curry with minced meat and aubergines, so I make this often.
