Egg Salad Sandwiches for Hanami Bento

Simple egg sandwiches that are also great for breakfast. Mash the boiled eggs with a fork.

Ingredients: 1 serving

White bread (from an 8-slice loaf)
2 slices
1 tablespoon
●Salt and pepper
a dash
Margarine or butter
a small amount
a small amount


1. Hard boil the egg. Refer to Recipe ID: 2007869.
2. When it has cooled down slightly, peel off the shell and place the egg in a bowl. Mash with a fork and then add the ● ingredients.
3. Spread a thin layer of margarine and mustard onto the bread. Top with the egg mixture.
4. Place the other slice of bread on top and press down on it lightly. Cut the crusts off and then slice into 4.
5. Transfer to a serving dish.
6. If the bread is slightly stale, wrap in a dampened paper towel, and then with cling film, and leave in the fridge for about 30 minutes.
7. I recommend using soft bread for this.
8. Add lettuce leaves for crunch.
