Double Cheese Rice Flour and Potato Fritters in a Frying Pan

These are chewy and dense with melt-in-your-mouth cheese! It's used in both the dough and as a filling--a double serving of cheese. These will be irresistible for cheese lovers! They're easy to make in a frying pan.

Ingredients: 2 servings

Potatoes
2
Katakuriko
70 g
Rice flour (or flour)
30 g
Pizza cheese
50 g
Water
2 tablespoons
Salt
a pinch
Olive oil
a small amount
Cheese for filling
to taste

Steps

1. Peel the potatoes, and remove any eyes.
2. Wrap them in plastic wrap and microwave or boil until tender. I cook them wrapped in the rice cooker to save electricity.
3. When the potatoes are tender, mash with a potato masher, add katakuriko, rice flour, and salt, mash them up and mix together. Next, add the cheese while the potatoes are still hot, and mix.
4. When the consistency is about even, add the water, and knead with your hands.
5. Roll up into balls, and fill with cheese. Be careful not to let the cheese spill out!
6. Heat olive oil in a frying pan, then grill until both sides are golden brown.
7. Turn off the heat, then let them sit for 1 to 2 minutes in the frying pan (to allow the cheese on the inside to melt in residual heat). They're done!
8. You can make Pao De Queijo (cheese bread) with the same dough. (See Recipe ID: 2150395).
