I used a soy sauce with bonito dashi in it. You can use as much soy sauce and/or mentsuyu sauce as you like.
Story Behind this Recipe
I learned this from a chef at a restaurant where I used to work, and adapted it to my tastes. This is great when you want a pasta lunch for one. I usually have about 140 g of pasta with this, since it's so scrumptious.
If you mix in the pasta without totally draining off the cooking water from it, the oil and water will emulsify in a delicious way.
