Easy Matcha Cream for Crepe or Dorayaki

I added matcha to whipped cream.
The sweetness is cut down!
It is a slightly bitter whipped cream. 
For crepes dorayaki (а sweet red bean pancake) parfait.
It also goes really well with anko.


Heavy whipping cream
100 ml
2 teaspoons
2 teaspoons


1. Combine in a bowl the heavy whipping cream, matcha, and sugar. Dip the bottom of the bowl in ice water.
2. Whip the mixture well. If you own a electric mixer, do use it.
3. Beat the cream until soft peaks form. When you scoop the cream with the whisk, its tip will bend down. That is the softness we are looking for.
4. Done.

Story Behind this Recipe

My husband and I both love "anko" (sweet red bean paste). Matcha brings out the flavor of the "anko" and they taste great together.
