Heat the olive oil and garlic in a pan over low heat. When it becomes fragrant, add the onion and cook. Add the wine and turn the heat to high to cook off the alcohol.
Add the canned tomato, 100 ml of water, soup stock granules, and herbs and simmer on low heat for 15 minutes. If the sauce reduces too much, add more water.
When it has thickened, add the salt, pepper, and nutmeg and enjoy.
You can store it in the freezer in freezer bags after it has cooled. It will be good for 2~3 months. It's handy to freeze in a thin layer and break it open to use.

Story Behind this Recipe
I learned this while I was abroad. This is an easy version that's light on the oil. It's a simple and delicious all-purpose sauce with no frills!
Be sure not to burn the garlic when cooking it. You can make various versions by adding meat, vegetables, white sauce, sour cream, curry powder, etc. If you want to have a thicker sauce, you can add some katakuriko potato starch to adjust the thickness.
