Story Behind this Recipe
I used home-made rice flour to try out various dishes, and came up with a simple and delicious chewy dough. This is a convenient way to re-appropriate leftovers from other dishes.
This dough has the stickiness of rice flour, and a delicious salty taste. Use sugar, soy sauce, or nori seaweed for mochi rice dumplings, or enjoy it as pizza for a nice side dish. When baking in a toaster oven, divide the dough in half and shape into 2 oblong pieces. Please be careful not to burn yourself. When I make this, I always reduce the recipe by one half.
