Microwave and Mash! Easy Sweet Potato Pound Cake

Just microwave and mash the sweet potato! Even though it's easy to make, it's a fluffy sweet potato cake!

Ingredients: 20 cm pound cake

Sweet potato
300 g (about 1 large)
150 ml
Butter (or margarine)
40 g
50 g
White flour
20 g
Baking powder (optional)
5 g


1. Cut the sweet potato into 1 cm chunks, microwave until soft, then mash.
2. Add the milk and mix. Preheat the oven to 180°C.
3. In a separate bowl, whip the butter until creamy like the consistency of mayonnaise. (microwave for about 40 seconds at 300 W.)
4. Add the sugar to the butter and mix well.
5. Next, add the beaten egg a little at a time and mix well.
6. Add the sweet potato and mix.
7. Sift the flour and baking powder, and fold into the batter.
8. Line your baking pan with parchment paper and pour the batter into it. Bake at 180°C for 40 minutes.
