Really Easy! Egg, Potato, and Macaroni Salad

Just mix egg, mashed potatoes and macaroni with mayonnaise. Is this potato salad? Macaroni salad??? Egg salad??? Great in bentos or as a side dish.

Ingredients: 4 to 5 servings

1 large
Hard boiled egg
60 to 70 g
1/2 teaspoon
★Salt and pepper (I recommend black pepper for adults)
a small amount
to taste
★ Umami seasoning (optional)
a pinch
a small amount
Parsley, grated cheese (optional)
a small amount of each


1. Boil the potato until tender, peel and mash while still hot. You can also peel it first, cut up into thin slices, boil until tender for about 15 minutes and mash.
2. Mix in the sugar while it's still warm.
3. Boil the macaroni following package instructions, drain and leave to cool. Chop up the boiled egg roughly.
4. Mix the mashed potato, cooked and cooled macaroni and chopped egg, plus the ★ ingredients together. Adjust the consistency with milk, season with salt and pepper and it's done. Add parsley, black pepper and grated cheese on top to taste.
5. Pack in a bento!
6. When you want some yellow color or just want to make it pretty, reserve some of the egg yolk and pass it through a tea strainer. Use as a topping, mimosa-salad style.
7. The photo here is 1 serving arranged as described in Step 6. If you use the whole yolk as topping, add another boiled egg.

Story Behind this Recipe

I made my usual potato salad without any onion or carrot and it was really good. I couldn't stop tasting it! This salad may make me fat, so maybe I should use reduced-calorie mayonnaise.
