Cranberry and Walnut Carrot Salad

This is an elegant salad with apples. It's also great sandwiched in bread.

Ingredients: 2-3 servings

1 large
1 small
a handful
Dried cranberries
3 rounded spoonfuls
Chopped parsley
a small amount
●Olive oil
1 1/2 tablespoons
●Cider vinegar (or apple vinegar)
1 1/2 tablespoons
●Lemon juice
1 teaspoon
●Salt and pepper
a small amount


1. Dry-roast the walnuts. Combine the ● ingredients in a bowl.
2. Peel and julienne or grate the carrots. Wash the apple and cut into thin wedges.
3. Add the apple to the bowl from Step 1 and mix together. Add the remaining ingredients, mix, and serve.
4. If you let it sit for 20-30 minutes, the flavors will settle and become even more delicious.
