Easy Dan Dan Soup with Ground Sesame Seeds and Doubanjiang

Easy Dan Dan Soup with Ground Sesame Seeds and Doubanjiang

Use ingredients you already have on hand to make an easy dan dan soup.
Even though it's like you put it together on a whim, it's really tasty. Hmm, it tastes just like that dan dan glass noodle soup I bought that time from that place!

Ingredients: 2 servings

★Ground sesame seeds
4 tablespoons
2 tablespoons
1 teaspoon
★Sesame oil
2 tablespoons
2 teaspoons
★Soy sauce
1 teaspoon
★Garlic and ginger
1/2 to 1 piece/clove each
Ground pork
60 g
600 ml
Chicken soup stock (granules)
2 tablespoons
Cellophane noodles
to taste
Green onions, shiitake mushrooms, carrots, bean sprouts, Chinese chives etc. - vegetables of your choice
to taste
as much as you like

1. Finely chop or grate the garlic and ginger, whichever you prefer.
2. Combine all the ★ ingredient in a pan, and mix well with a spatula.
3. Cook over low-medium heat until bubbling and fragrant.
4. Add the ground pork and stir fry it. When the color of the meat changes, add water, chicken soup stock, the vegetables and cellophane noodles. Cook until the noodles are tender.
5. Add as much ra-yu as you like and enjoy.
6. If you add too many vegetables it will become too weirdly sweet. It will still taste nice, but won't really be like dan dan noodles.
7. This version has rice and a generous amount of vegetables in it. The version in the main photo only has green onion, shiitake mushrooms and cellophane noodles.
8. You can use a can of mackerel instead of ground pork.
9. Try adding leftover rice to make it like a rice soup, or use ramen noodles instead of cellophane noodles!!
