Put the okara and soy milk into a pot. Mix well and then turn on the heat to medium.
Once Step 1 begins to bubble, add the salt and cheese. Mix well.
When the cheese has melted, stir until it becomes as thick as you want.
Optionally season with pepper and it's done. It's of course a great side dish to any meat menu, and it also tastes rice replacer when having curry.
Story Behind this Recipe
During my low-carb diet I had some okara and thought that it tasted like a potato, so I tried making this.
Stir continuously once the heat is turned on so that it doesn't burn. Adjust the amount of soy milk based on the amount of moisture in the okara. Mix it together until it becomes your preferred thickness.
