Stir Fried Bacon and Potatoes with Garlic

My potato-loving child loves this! This garlicky dish is great with beer too. You could pack it in your bento or quickly prepare this when you need one more dish for dinner.

Ingredients: 2 servings

2 large
1 clove
3 slices
Olive oil
about 3 tablespoons
Salt and pepper
To taste
Finely chopped parsley (or dried parsley)
To taste


1. Peel the potatoes and slice to about 5 mm thick. Soak in a bowl of water, drain and pat dry. Slice the garlic thinly.
2. Slice the bacon into thin strips.
3. Heat the olive oil in a frying pan, put in the garlic and potatoes, and stir-fry slowly over low-medium heat.
4. Brown both sides.
5. Wipe excess oil in the pan with paper towels.
6. Add the bacon, and cook until crispy.
7. Season with salt and pepper. Sprinkle with parsley and it's done!

I got a lot of potatoes on sale (they were only 9 yen a piece)!
My potato-loving daughter loves this. She can eat up a big serving lickety-split.
