Tea Flavored Mini Cakes with Strawberry Jam

These are very elegant mini cakes with earl grey tea leaves and strawberry jam.

Ingredients: 32 pieces, each about 3 cm

Pancake mix
100 g
Earl grey tea leaves
1 tea bag
1/2 ( 25 g)
10 g
15 g
70 ml
15 g
Strawberry jam
about 40 g
Vegetable oil (for spreading on the mold)

1. Put the pancake mix, earl grey tea leaves, egg, sugar, honey and milk into a bowl to beat together.
2. Put the chopped butter into a heat proof container. Microwave for 30 seconds on 600 W to melt. Then add to the bowl.
3. Spread the vegetable oil onto petite gateau molds. Spoon batter into molds.
4. The batter will rise while baking, so only fill the molds up to 2/3 full.
5. Place strawberry jam on each piece.
6. Mix the jam with a toothpick gently to make a marble pattern.
7. Bake for about 13 to 15 minutes in the preheated oven at 170°C.

Story Behind this Recipe

I rearranged another recipe for cupcakes with tea leaves and strawberry jam using petite gateau molds.
I changed the amount of egg to 1/2, then it turns to a fluffy texture.
