Warm Soy Risotto with Chinese Cabbage

A vegetarian meal. This recipe doesn't use meat. The risotto will warm you right up on a cold day.

Ingredients: 1 servings

16 grain rice
1 bowlful
Soy milk
100 ml
Chinese cabbage
4 leaves
Onions (finely chopped)
Olive oil (for stir frying)
a small amount
Dashi stock granules
1 teaspoon
1/4 teaspoon
Black pepper
1/4 teaspoon
Dried Basil
to taste


1. Cut the Chinese cabbage into bite-sized pieces and mince the onion. Heat some olive oil in a frying pan and stir-fry.
2. When the cabbage has become tender and transparent, add the rice and the soy milk, in that order. Lower the heat to low and simmer until the liquid has evaporated.
3. Once the liquid has evaporated and the rice grains have expanded, season with salt, pepper, and dashi stock.
4. Plate and top with basil if you'd like.

Story Behind this Recipe

I made this for my lunch on a really cold day. I looked to see what ingredients I had. I only had Chinese cabbage! So I made a very simple risotto.
