Chocolate Mousse Cake

A variation of chocolate bavarois in a mousse cake. This delicious mousse has just the sweetness of chocolate and is very soft and smooth.

Ingredients: 18.5 cm stainless steel cake pan

Cocoa sponge cake
1 (18 cm in diameter and approximately 2 cm thick)
Chocolate Mousse
Meiji milk chocolate
3 (1 bar 55 g)
400 ml
12 g
Heavy cream
200 ml
Chocolate syrup (store bought)
as desired


1. Add heavy cream to a bowl and whip with a hand mixer until soft peaks form.
2. Add milk, broken-up chocolate, and gelatin to a pot and bring to a boil while mixing.
3. Put the pot into a bowl filled with ice water, and mix while cooling to thicken. Just as it starts to thicken, it's ready.
4. Add the mixture from Step 3 to the bowl from Step 1 and mix together.
5. Spread out the sponge cake in the pan.
6. Pour the mousse mixture on top of the sponge cake. Chill in the refrigerator for 90 minutes.
7. Top with chocolate syrup if you like, and it's complete.
