Easy Mascarpone Spritz Cookies

These cookies taste delicious with the flavor and sourness of the mascarpone cheese. They are also easy to make.

Ingredients: makes 50 cookies

Unsalted butter
30 g
60 g
Egg yolk
Olive oil
2 tablespoons

1. Prepping:
2. Bring the mascarpone, butter, and egg yolk to room temperature. Sift the flour. Preheat the oven to 180℃.
3. Making the dough:
4. Put the mascarpone into a bowl and whisk until it's creamy. Add the butter and sugar and continue to whisk.
5. Add the egg yolk, olive oil, flour, and salt into the same bowl, and mix until smooth.
6. Transfer the dough into a pastry bag, and pipe onto a baking tray.
7. Bake in the oven for 15 minutes.
8. Once done, let cool, and enjoy.

Story Behind this Recipe

Since the best by date on my mascarpone was drawing near, I made these cookies without much thought. I love the flavor and sourness of the mascarpone cheese.

I halved the original amount of butter and substituted it with olive oil to make the cookies lighter. Of course, you can use butter or olive oil entirely.
