These cookies are made with egg yolks and have a light, crispy texture. Just mix the ingredients, roll into balls, and bake! The dough doesn't need to rest in the refrigerator, so these are really easy to make.
Ingredients: Makes 35-38 cookies (1 or 2 baking sheets of cookies)
Cream the margarine, add the sugar and egg yolk and mix well.
Sift the cake flour and add it to the bowl, folding it in with a spatula.
While the dough is still floury, add the chocolate chips and fold them in.
Stop mixing just after the flour disappears into the dough. It's ok if the dough is still crumbly and doesn't hold together yet.
Grab a piece of dough and squeeze firmly; it will come together.
Then, using your fingers, squeeze the dough tightly to make it round.
Use the palms of your hand to roll the dough into balls.
Bake for 17 minutes at 170ºC. The cookies will be soft right after baking, but when they cool they'll be crispy.
Story Behind this Recipe
I wanted to make an easy cookie recipe which used chocolate chips.
Please refer to my tips for how to roll the dough. If you make these with butter, it will be a little harder to get the dough to come together after you add the chocolate chips, but when you squeeze the dough you'll be able to roll it into balls. Butter will give the cookies a richer flavor, but they're good made with margarine too.
