Moist and Tender Bang Bang Chicken Salad

Moist and Tender Bang Bang Chicken Salad

It is easy to make this moist and tender chicken dish.
By adding sake, you won't notice the unpleasant smell from broiling the chicken. Serve with your favorite sesame dressing.

Ingredients: 2 servings

Chicken breast
◆Sake (cooking sake works too)
100 ml
300 ml
Sesame dressing
4 tablespoons

1. Cut the skin and the fat off the chicken. Sprinkle 1 tablespoon of sake (not listed) and let it sit for 5 minutes.
2. In a pot, add chicken skin and water and bring it to a boil. Continue simmering for 3 minutes. Add the chicken breast into the pot and turn off the heat immediately.
3. Cover the pot and leave it to cool. When it has cooled, shred the chicken along the grain.
4. Cut of the stem end of the cucumber, slice it diagonally to 2 mm thick, then slice thinly to shred.
5. Cut tomatoes in half, remove the stems, and slice into 2 mm thick half moons.
6. Place the cut tomatoes on a serving plate. Pile the chicken and cucumber on top. Drizzle your favorite sesame salad dressing right before serving.

Story Behind this Recipe

I came up with different chicken recipes because I figured out how to tenderize chicken properly.
