Breakfast Crumpets with Roasted Wheat Germ

These are English pancakes called crumpets. They are wonderfully crispy, fluffy and chewy! I strongly recommend using aromatic roasted wheat germ! I could just keep on eating them.

Ingredients: 3 servings (7 to 8 crumpets)

★ Cake flour
70 g
★ Bread flour
70 g
★ Wheat germ (roasted)
10 g
★ Sugar
1 teaspoon
★ Dry yeast
3 g (1/2 teaspoon)
2 g (2 pinches)
200 ml


1. Put the ★ ingredients in a bowl. Warm the milk to body temperature and pour about half on the sugar and dry yeast.
2. Add the rest of the milk and salt, and mix with a whisk until the mixture becomes smooth.
3. Cover with cling film, and allow it to rise in a warm place for about 1 hour until it has doubled in size.
4. Heat a frying pan over high heat, then place it on top of a damp kitchen cloth to lower its temperature.
5. Melt a small amount of butter in the frying pan, and pour in the batter from Step 3 to form 8 cm circles.
6. Fry for about 2 minutes over low-medium heat, and when some bubbles appear on the surface, flip it over and fry for a minute. Fry the others in the same way.
7. Spread butter, and add maple syrup or jam on top to taste, and enjoy.

Story Behind this Recipe

I made these when I ran out of bread for breakfast.
They are easier to make than baking bread, and I like them as they are not as sweet as normal pancakes.
I added roasted wheat germ, because my daughter and I love the fragrant smell!!
