Freezable Minced Cabbage & Beef Cutlets for Bento

This a side dish that stays tender even when cool, and they are easy to eat!
Form them, cook them, and chill them. Then all you need to do is heat them up in the microwave in the morning when you're in a hurry.

Ingredients: Makes 12, 6 cm large cutlets

Minced beef (You can use pork too)
200 g
Cabbage
100 g (2-3 leaves)
・Salt (for cabbage)
1/4 teaspoon
Onion
50 g (1/4 onion)
Egg
1/2
Panko
1/2 cup
Milk
30 ml
Salt
a small amount
Pepper
a small amount
Frying oil
as needed
Half a batch of "Simple 2-Step Batter" Recipe ID: 1364962
Beaten egg
1/2
Cake flour
4 tablespoons
Water
2 and 1/2 tablespoon
・Panko
as needed

Steps

1. [2-Step Batter] Beat the egg in a bowl. Add in the flour and water and mix well.
2. Finely chop the cabbage and add a little salt to it. Mince the onion as well. Mix together the panko crumbs and milk until the milk is absorbed.
3. Next, combine the meat, everything you made in Step 2, salt, and pepper in a bowl and mix well with your hands.
4. Next, form the mixture into 6 cm wide by 1 cm thick small patties on a tray and shape them.
5. Dip them in the batter prepared in Step 1. They can break easily so try resting them on top of some chopsticks while you do it.
6. Next, coat both sides with the panko crumbs.
7. Deep fry the cutlets. Once they have cooled, put them in a freezer bag and then put them in the freezer.
8. If you're going to be putting them into a bento, place the required amount on a heatproof plate and warm in the microwave.

Story Behind this Recipe

I usually make these minced cutlets for dinner, and I decided to figure out a way that I could make these and save them for bento. This is an easy-to-make amount that I came up with.
