Add the ingredients marked ☆ to a frying pan. Add the tofu while crumbling it, and cook over medium-low heat.
Beat the eggs and add the cheese.
When the contents of the frying pan are bubbling, add the beaten egg from step 2. Put a lid on and cook until the egg is soft-set.
A creamy soft finish.
Put some rice in a bowl, spoon plenty of the egg-tofu mixture on top and serve.
Story Behind this Recipe
I did a variation on my "Chinese cabbage and pork with egg and cheese" recipe, using easy to digest and nutritious tofu instead of the meat and cabbage.
Make sure to mix the cheese into the beaten egg. If you put the cheese on top it will just get hard rather than creamy. If you're using sliced cheese, break into small pieces before mixing into the egg.
