Simple, Umami-Filled Simmered Pork

This is a simple simmered pork with lots of garlic and ginger. Simmer with a lot of sake for a rich umami flavor.

Ingredients: 4 servings

Pork belly block
500 g
●Garlic (grated)
1 clove
●Ginger (grated)
1 teaspoon
450 ml
150 ml
●Soy sauce
70 ml
2 tablespoons
●Bonito dashi stock granules
1 tablespoon
2 tablespoons


1. Add the ● ingredients to a pot and bring to a boil. Cut the pork into 1 cm pieces and add to the pot. Cut out a piece of cooking paper or aluminium foil into the size of the pot and lay on top of the pork. Simmer for 30 minutes on low to medium heat.
2. Add mirin to the pot and simmer for another 10 minutes, and it's done.
