Marc's Spicy Tuna (Sushi Hand Rolls)

Spicy Tuna, popular in Hawaii and in the U.S. mainland, is sure to be the star of your next hand rolled sushi party!

Ingredients: Makes approximately 10 rolls

Tuna sashimi
approximately 250 g
1 clove
Green onions
about 2
Sesame oil
2 tablespoons
Ichimi spice
2 teaspoons
Sansho pepper
1/4 teapoon
White pepper
1 teaspoon
Masago or Tobiko fish roe
3 tablespoons
3 tablespoons


1. Cut the tuna sashimi into 1-1.5 cm cubes. Cut the green onion in small pieces. Finely chop the garlic.
2. Add the sesame oil to the tuna, green onion and garlic from Step 1, and mix lightly.
3. Add all of the seasonings, except the mayonnaise. Adjust the amount of chilli powder and other spices to suit your taste.
4. Add the fish roe and mix until it's blended into the other ingredients.
5. Add in the mayonnaise and mix well. Taste, and adjust the seasoning to your liking.
6. It's done. It looks something like Negitoro (minced fatty tuna and green onion).

Story Behind this Recipe

This is my husband's recipe for Spicy Tuna. After eating this at Genki Sushi in Honolulu, he wondered what was in it, and decided to try making it himself. This is Marc's original recipe, settled on after many revisions.
