Strawberry and Blueberry No-Bake Cheesecake Mousse

This is so fluffy and soft that it almost melts in your mouth. It has a light sweet and tart aftertaste.

Ingredients: 2 ramekins

Heavy cream
50 ml
Strawberries
80 g
Blueberries
30 g
Granulated sugar
35 g
Lemon juice
3 g
Powdered gelatin
3 g
Water
1.5 tablespoons
Cream cheese
100 g
Yogurt
20 g

Steps

1. Whip the cream with a whisk until it forms a thick ribbon.
2. Cut the strawberries into small pieces, mix with the blueberries, granulated sugar and lemon juice, and microwave (for 1 minute at 500 W).
3. Mix the gelatin and water, and microwave (for 30 seconds at 500 W). Blend the ingredients from Step 2 with the cream cheese and yogurt in a mixer. Add the gelatin, and blend once more.
4. Add this mixture to the cream from Step 1, and mix thoroughly.
5. Pour into ramekins, cool and set in the fridge to complete.

Story Behind this Recipe

The was the cream I used for the filling of a zuccotto cake, but my family really liked it, so I just made it as a mousse.
