Easy Sushi Cake for Birthday Parties

You can easily make this gorgeous sushi cake with chirashi sushi mix. Prepare for Christmas, New Year's, Doll Festival, and even for Valentine's Day for those who aren't a fan of chocolate.

Ingredients: 18 cm round pan

Hot cooked rice
3 rice cooker cups (when uncooked) + 1 small rice bowl (cooked)
Chirashi sushi mix
1 package (enough for 3 rice cooker cups)
Toppings to your preference
Smoked salmon
80 g
Salmon roe
60 g
Avocado (1 cm cubes)
Shiso leaves (finely chop half, cut the other half into leaf shapes)
5 leaves
Shredded omelet
1 bag (to taste)
White sesame seeds
to taste
Shredded nori seaweed
to taste


1. Line the bottom only of the round pan with parchment paper. Prepare the chirashi sushi according to the directions of the package. The mix is a little too concentrated to my liking, so I added an extra cup of rice.
2. Stuff rice into the pan about halfway to the top. Put in half the salmon, half the shiso, half the sesame seeds, and half the nori. Cover completely with the remaining rice.
3. Cover with plastic wrap and use your hands to push it all tightly together. Flip it onto a plate and remove the parchment paper from the bottom.
4. Sprinkle with the remaining sesame seeds and nori, then decorate to top with the shredded omelet, avocado, salmon roe, salmon, and shiso leaves.

Story Behind this Recipe

I thought this would be fun to separate into individual portions and eat on Christmas. I used pre-made chirashi sushi mix to make this easily. It's also ideal for New Year's, birthdays, or any event.
