Cut each chicken tenderloin into 5 thin slices. Cover the toaster oven tray with aluminum foil and place the chicken on the tray.
Season with the grated garlic, salt, and pepper.
Top with lots of cheese and sprinkle with panko.
Bake in the toaster oven for about 10 minutes. It might start to burn after 5 minutes, so cover it with aluminum foil to prevent scorching.
Story Behind this Recipe
I don't remember how I started making this dish, but I used to make it all the time when I got married and everything suddenly got very busy. It's easy to make one serving so I usually make it for my son when he gets home from cram school.
Use non-stick aluminum foil. If you use regular foil, thinly coat it with oil. It's awesome if you use a little bit of chicken and a ton of cheese! The cheese that sticks to the foil is nice and crisp. The bread crumbs cook and brown quickly, so cover it quickly with foil and continue baking.
