Cut the chicken breast in half. Marinate in the sake and salt.
Wipe the excess moisture from the chicken. Coat with katakuriko.
Heat a frying pan and spread olive oil (not listed on the ingredient list) in the pan. Cook the skin side first.
Cover with a lid. Cook both sides until golden brown. While frying the chicken, combine the soy sauce, honey, and mirin to make sauce 1. Mash the avocado and add a small amount of salt.
When the chicken is cooked, add sauce 1 to the pan to coat the chicken with the sauce. Cut the chicken and serve on a plate.
Serve with avocado and top with black pepper.
I served rice and salad on the same plate to make a one-dish meal.

Story Behind this Recipe
I just came up with this recipe. I love avocado, so I put it on chicken steak.
Coat the chicken with katakuriko to contain the umami flavour of the chicken. I cut the chicken after cooking, but you can cut it before you cook if you like. A generous amount of the sauce makes the dish more delicious, so the amount of the sauce is relatively large.
