Side Salad with Edamame Beans, Okra and Corn

I love edamame beans. The season of edamame is coming so I made this salad with edamame and corn which my children love. It's colorful and pretty!

Ingredients: 4 servings

Edamame beans
About 300g
Okra
About 5
Myoga ginger

Corn (frozen or tinned)
About 100 g
○ Sake
1 teaspoon
○ Soy sauce
1 and 1/2 tablespoons
○Dashi Japanese stock powder
1/4 teaspoon (dissolved with 2 tablespoons of hot water)
Bonito flakes
5 g

Steps

1. Combine the ○ ingredients. Wash the edamame pods and rub with salt. Cook in the boiled and salted water. Cool down and remove shells. Add the bonito flakes into the ○ mixture.
2. Wash the okra and rub with salt. Cook in boiled and salted water. Cut into about 1 cm-lengths. Slice the myoga ginger thinly and on the diagonal. Blanch the corn in salted water and drain in a colander.
3. Mix everything gently and you're done.
