Vivid Pancake Mix & Carrot Cheese Scones

It turns out that the sweetness of one carrot and some cream cheese in these bright orange scones make the perfect culinary combination.

Ingredients: 8 scones

Carrot
1 (approximately 150 g)
Pancake mix
200 g
Butter (unsalted)
50 g
Lemon juice (bottled is fine)
1 tablespoon
Cream cheese
50 g

Steps

1. Place the butter on top of the pancake mix and heat for 30-60 seconds in a microwave until soft. Stir with a rubber spatula and the mixture should become crumbly.
2. Add the grated carrot and lemon juice and give everythng a quick mix. Then add the cream cheese, cut into 5 mm cubes, and fold in.
3. Separate the mixture into 8 equal portions and drop onto a baking tray lined with baking paper. Flatten each portion out until around 2 cm thick.
4. Bake for 25 minutes in an oven preheated to 170°C and they're done.
