Warming Winter Vegetable Stew

This stew (creamy soup) can be made in a quickly with veggies on hand.

Ingredients: 4 servings

Bacon (block)
50 g
Onion
1/2
Carrot
5 cm
Kabocha squash
1/12
Flour
2 tablespoons
Heavy cream (vegetable based)
50 ml
Water
400 ml
Milk
100 ml
Salt
a small amount
Consomme stock cube

Steps

1. Cut the onions into 3-cm long slivers. Cut the carrots and kabocha squash 3-cm long, 5-mm thick. pieces. Cut the bacon into 1 cm squares.
2. Stir fry the bacon and onion, then add the carrots a little at a time, and stir fry. Turn off the heat and coat with flour.
3. Mix in the heavy cream a little at a time over low heat, and once it starts to thicken, alternate with additions of water. Add the crushed consomme stock cube.
4. Add the kabocha and simmer on low heat for 10 minutes. Season to taste with milk and salt.

Story Behind this Recipe

Once I had some delicious cream soup that had kabocha squash in it. I imitated it to come up with this recipe that can be made quickly.
If you don't like milk, just skip the step to add it in.
