Japanese Style Matcha Cookies

It's nice to have an occasional slightly bitter cookie.

Ingredients: About 30

■ Cake flour
120 g
■ Matcha
6 g
Unsalted butter
70 g
48 g
Egg yolk
Milk (to finish)
as needed
White roasted sesame seeds (to finish)
as needed


1. Combine the ingredients marked with a ■.
2. Whip the butter, add sugar and blend, then stir in the egg yolk.
3. Add match powder, blend until even, form thick bars, wrap in plastic wrap, and let sit in the freezer for over 1 hour.
4. Cut into 5 mm thick slices and arrange on a parchment sheet set on an oven tray. Brush with milk and sprinkle with sesame seeds.
5. Bake for 8 minutes at 170℃.
6. Transfer to a cooling rack and let cool.

I needed to use up an egg yolk.
I had a tiny bit of matcha on hand, so I used it up.
