Easy and Healthy Daikon Radish Soup

"Hmm? This is so good! Is it ramen!?" My kids just ate this up.

Ingredients

Daikon radish
250 g
Water
700 ml
Soup stock cube
1
Salt and pepper
a small amount
Oyster sauce
1 teaspoon
Soy sauce
1 teaspoon

Steps

1. Put the water in a pan. Peel the piece of daikon radish, and slice it very thinly right over the pan using a vegetable slicer or mandoline. You can just julienne the daikon radish with a knife, of course. Cut it as thinly as you would for a salad.
2. Add the soup stock cube, and simmer until the daikon radish is very soft. Add the soy sauce, oyster sauce and salt and pepper to taste and serve.

Story Behind this Recipe

I wanted to use daikon radish in a soup. I usually cut it into cubes, but I tried julienning it instead, and I was surprised just how much like ramen it looked. I didn't realize how delicious it would be.
