This soup is very easy and healthy! It's easier to eat than aojiru (green vegetable juice), with the richness of tofu, the sweetness of corn, and the aroma of butter.
When I had a cold and didn't have an appetite, and didn't want to go shopping, I made this with what I had on hand. I was surprised by how delicious it turned out.
You could use soy milk instead of tofu.You could also use aojiru (green vegetable juice) instead of kale.
