So Simple! Kale and Tofu Potage

This soup is very easy and healthy! It's easier to eat than aojiru (green vegetable juice), with the richness of tofu, the sweetness of corn, and the aroma of butter.

Ingredients

Kale
2 leaves
Onion
1
Tofu
1 block
Canned corn kernels
1 can
Soup stock cubes
2
Butter
1 teaspoon
Salt
a pinch
Pepper
a pinch

Steps

1. Boil the kale, and then place into ice-cold water.
2. Blend the kale, onion and tofu in a food processor.
3. Put the mixture from Step 1, canned corn (with liquid), soup stock cubes and 1 cup of water into a saucepan and warm up over low heat.
4. Season with salt and pepper. Melt in the butter for aroma. You're all done.

Story Behind this Recipe

When I had a cold and didn't have an appetite, and didn't want to go shopping, I made this with what I had on hand. I was surprised by how delicious it turned out.
