Comforting Salty-Sweet Simmered Chicken Thighs, Sweet Potato, and Eggs

Sweet potato is transformed into a delicious dish for dinner.
My husband doesn't like sweet potatoes but said, "This is delicious" and gobbled it up.

Ingredients: 4 servings

Chicken thigh meat
about 500 g
Sweet potato
1 large
Boiled eggs

Flavoring ingredients:
Soy sauce
4 ~ 5 tablespoons
Honey
3 tablespoons
Sugar
1 ~ 2 teaspoons
Mirin
2 tablespoons
Water
100 ml
White sesame seeds (or black sesame seeds)
2 tablespoons
To flavor the chicken thigh meat:
Salt and pepper
a small amount
Sake
a small amount

Steps

1. Sprinkle salt, pepper and sake on the chicken, and rub in. Chop the sweet potato into bite-sized pieces, and soak in water.
2. Pour a small amount of oil in a frying pan, and stir-fry the chicken. When it's lightly browned, add the sweet potato, and continue stir-frying until the sweet potato turns slightly yellow.
3. Add water, all the flavoring ingredients and boiled eggs, then bring to a boil.
4. Cover the pan with aluminium foil (right on top of the pan ingredients), and simmer slowly while stirring occasionally.
5. When the sweet potato is cooked through, it's done.

I had a lot of sweet potatoes, so I wanted use them to make a dish for dinner.
