Ankake Fried Rice

This is a very simple dish! Work the thick sauce as the rice cooks! It's super easy!

Ingredients: 2 servings

Fried Rice
Plain cooked rice
2 rice cooker cups worth (360ml uncooked)
Chicken meat
50 g
Carrot
1/4
Onion
1/4
Shimeji mushrooms
1/4 bunch
☆ Chinese soup stock
1 tablespoon
☆ Soy sauce
1 tablespoon
☆ Sake
1 tablespoon
☆ Salt and pepper
a small amount
Thick sauce:
Water
400 g
Egg
1
Chinese soup stock
2 teaspoons
Mirin
2 teaspoons
Sugar
1 teaspoon
Sesame oil
a small amount
Katakuriko slurry
1 tablespoon

Steps

1. Wash the rice and add an usual amount of water. Mince the chicken, carrot, and onion. Shred the shimeji mushrooms.
2. Add all of the ingredients plus the ☆ ingredients to the rice cooker, and cook. If you have a quick-cook option, go ahead and use it.
3. Bring the water and the thick sauce ingredients to a boil, then add the beaten egg. Mix it quickly so that it doesn't set.
4. Create the creaminess using water-dissolved katakuriko. Add the sesame oil just before stopping the heat, and you've made your thick sauce!
5. Create a small mound of rice on a plate, pour in the thick sauce around it and it's complete! Serve with nori and white sesame if you like.
