Smooth Sweet Potato Bites

These sweet potato bites is perfect for the fall season.
Plenty of heavy cream makes it smooth.
Since it's small, it makes great gifts.

Ingredients: 20 pieces

Sweet potatos
1 ~ 2 (600 g)
60 g
100 g
20 g
Heavy cream
80 ml
Egg yolk
Vanilla extract
as needed
Egg yolk (for the glaze)
1 teaspoon


1. Peel the sweet potatoes and boil.
2. When they become soft, transfer into a bowl, and mash well.
3. Lightly microwave the butter to melt, and add to the bowl. Add the egg yolk, sugar, and honey, then mix with a spatula.
4. Add the heavy cream little by little. Adjust the consistency so that you can roll the mixture by hands. Add a few drops of vanilla extract.
5. Strain the mixture with a sieve. Don't skip this step even though it's a lot of work.
6. Arrange into shapes, and place on a baking sheet. Brush on a glaze made of beaten egg yolk and water.
7. Preheat the oven to 180℃, and bake for about 30 minutes while checking occasionally, then it's done.
