Add a pinch of salt to the water in a pan. When it boils, simmer the sweet potatoes over medium heat.
Test with a skewer. If you can poke a hole through, it's done. Drain in a colander or sieve.
Mash the sweet potatoes while they're still hot. If you feel the mixture is too runny, heat on low to evaporate off the excess moisture until the desired consistency.
While it's still hot, add butter (margarine), honey, sugar, and skim milk.
Knead everything together and taste.
Add egg yolk and vanilla extract. Please adjust the amount of milk according to the smoothness of the mixture.
Shape into preferred shapes. Brush on the egg yolk (with mirin) for the glaze. Top with black sesame seeds if you'd like.
Bake in an 180 to 200℃ oven until they reach your preferred shade of brown. You could also use a toaster oven.
With the honey, these stay moist through the following day. They're tasty hot or cold.
