My Special Plain Madeleines

These madeleines are simple, moist and delicious.


Unsalted butter
40 g
Cake flour
40 g
Baking powder
1/2 teaspoon
Almond flour
10 g
2 teaspoons
20 g
10 g


1. Coat the madeleine pan with oil. Melt the butter in the microwave. Shift together the cake flour and baking powder.
2. Combine the ■ marked ingredients together. Then add the almond flour and other dry ingredients.
3. Add the melted butter a little by little, stirring. Let sit in the refrigerator for more than an hour.
4. Pour the batter into the pan and bake in the 180℃ oven for 10~13 minutes.
5. Remove from the pan and cool on the rack.
6. Wrap with plastic wrap and let sit for overnight.
