Remove the rind of the simmered kabocha. Wrap the flesh in plastic wrap and form into a pumpkin shape. Use a toothpick or chopstick to carve lines on the pumpkin on top of the wrap.
Use a knife to cut the peel into eye and mouth shapes. Press them in gently and it's all set!

I wanted to make an easy character bento side dish that could be made a day ahead.
Because you're using simmered kabocha, there's no need for additional seasonings. Use plastic wrap to firmly squeeze it, to form into a pumpkin shape. The rind cuts easily, since it's still warm, to create the eyes and mouth.
