Cured Ham on Toast With Persimmon and Cottage Cheese

These toasted bites can be served as an appetizer. Persimmon, cottage cheese and cured ham go really well together!

Ingredients

Baguette
5-6 slices
Persimmon
1/2
Lemon juice
1/2 teaspoon plus
Cottage cheese
2 tablespoons
Cured ham
5-6 slices
Lettuce
as needed
Olive oil
as needed
Black pepper
to taste

Steps

1. Peel the persimmon and cut into small pieces. Sprinkle lemon juice and combine with cottage cheese.
2. Spread olive oil on the bread (to taste) and lightly toast. Shred the lettuce leaves into easy-to-eat sizes.
3. Put the lettuce, cured ham and the mixture from step 1 on the bread, and sprinkle as much black pepper as you like. Tip: I tear the ham slices in half before putting them on the bread.

Story Behind this Recipe

I've been eating this combination a lot recently. I often mixed persimmon and cottage cheese and top it on toast, but I wondered what it would taste like with cured ham as well. It turned out nicely, and everyone in my house loves this as an appetizer.
