Peel the persimmon and cut into small pieces. Sprinkle lemon juice and combine with cottage cheese.
Spread olive oil on the bread (to taste) and lightly toast. Shred the lettuce leaves into easy-to-eat sizes.
Put the lettuce, cured ham and the mixture from step 1 on the bread, and sprinkle as much black pepper as you like. Tip: I tear the ham slices in half before putting them on the bread.

I've been eating this combination a lot recently. I often mixed persimmon and cottage cheese and top it on toast, but I wondered what it would taste like with cured ham as well. It turned out nicely, and everyone in my house loves this as an appetizer.
*Cottage cheese only has 13 calories per tablespoon, so it is healthy. Adjust the amount to your liking. (I used 35g) *Use whatever bread you like. (The ingredients are enough for one slice of bread.) *The lettuce adds colour, but it is optional. * If the persimmons you are using are not sweet, add honey.
