First, make some hard-boiled eggs. Make them nice and hard.
Once boiled, peel off the shell and mash. I use a fork for this.
Mix in the mayonnaise and sugar, and add salt and pepper to taste. I think quite a strong flavour is best.
Wrap the egg mixture in the spring roll wrappers and deep fry! They're ready!

My mum made these egg spring rolls for me ever since I was young. They are delicious and make me feel so nostalgic. My friends were really happy when I taught them this recipe. They're really easy to make.
