Super Quick Kimchi & Tofu Simmer in the Microwave

This can be made in 5 minutes. Even though this is a microwave-made dish, the liquid from the tofu is released in the microwave, giving it the appearance of a simmered dish.

Ingredients: 1 serving

Firm tofu
100 g (1/4 block)
Thinly sliced pork belly (or scraps)
15 g (about 4 slices)
Napa cabbage kimchi
50 g plus to taste
●Sesame oil
1/2 teaspoon
●Soy sauce
1 teaspoon
Green onions (optional)
to taste


1. Place the tofu on a heat-resistant dish (preferably a deep dish) and cut into 6 pieces. Of course you don't need to cut it at all.
2. Top with kimchi.
3. Cut the pork into easy to eat pieces and place on top of the kimchi.
4. Lightly cover with plastic wrap and microwave at 500 W for 3 minutes. Since the meat doesn't cook completely through very easily, turn the meat over after about 2 minutes.
5. Once the pork has cooked through, pour in the sesame oil, soy sauce, and optionally garnish with green onion to finish.

Story Behind this Recipe

I love kimchi. But my children don't really enjoy eating it, so I made just enough tofu simmer for myself. In the summer I top the kimchi on chilled tofu and eat just eat it like that.
