Easy Sweet Potatoes Stewed in Orange Juice For Your Obento or a Snack

These work as either a dessert or a side dish. Enjoy the pretty orange color. They can also be turned into imo amanatto (candied sweet potatoes).

Ingredients: 4 servings

Sweet potatoes
2, narrow
Orange juice
200 ml
Sugar
4 tablespoons
Honey
3 tablespoons
Lemon juice (optional)
1 teaspoon
Gardenia seed (optional)
1

Steps

1. Rinse the sweet potatoes well, slice into rounds, then soak in water. If you skip this step, the color will not turn bright.
2. Add all of the ingredients to a sauce pan, bring to a boil on high heat, then simmer for about 10 minutes on low heat. Cover with a drop lid to prevent the potato slices from breaking apart while simmering.
3. When a skewer goes all the way through the sweet potatoes, remove the gardenia seed, and then it's ready to serve. They are delicious served either hot or cold. When serving cold, let them cool in the stewed liquid.
4. Enjoy them either hot or cold.

Story Behind this Recipe

My father-in-law grows a lot of sweet potatoes.

I generally stew them with the lemons that my father-in-law also grows, but I came up with this recipe after stewing them with some marmalade I had received.

I also recommend trying them as imo amanatto (candied sweet potatoes).
