Sweet Potato and Persimmon Salad: Great for Autumn

This healthy yogurt-flavored salad is full of the flavors of autumn! It also makes a nice dessert.

Ingredients: 2 servings

Sweet potato
1/2 (120 g)
◎ Plain yogurt
2 tablespoons
◎ Mayonnaise
1/2 tablespoon
◎ Lemon juice
1 teaspoon
◎ Maple syrup (or honey)
1 teaspoon
◎ Salt
A pinch
Raisins (optional)
1/2 tablespoon
Walnuts (optional)
1/2 tablespoon


1. Dice the persimmon and sweet potato into 1.5 cm sized cubes.
2. Soak the sweet potato in water, then microwave 3 minutes at 600 W. Combine and mix all ◎ ingredients.
3. Combine the persimmon and sweet potato with the mixed ◎ ingredients and serve. Also good with raisins and walnuts - top with as much of them as you like.

I wanted to make a simple and healthier Autumn-style salad. I also like the combination of persimmon and yogurt (Recipe ID: 1616447), so here's another variation with sweet potatoes.
