Fried Chicken Breast (Tatsuta-Age)

Fry these when you have time and freeze-store them for later. They're a big help during busy mornings!
The chicken is flavored with Japanese seasonings and ginger.


Chicken breast
1 (300 g)
1/2 tablespoon
1/2 teaspoon
1/8 teaspoon
Soy sauce
1 tablespoon
1 tablespoon
Squeezed ginger juice (or grated ginger)
1 teaspoon
as needed
Frying oil
as needed


1. Cut the chicken breast into bite-sized pieces and add to a bowl. Sprinkle sake, sugar, and salt and massage into the chicken to soften.
2. Add the soy sauce, mirin, and ginger juice to the chicken from Step 1 and let it sit for a while.
3. Cover the chicken pieces from Step 2 in katakuriko and fry in oil.
4. Once the chicken has cooled, place in a freeze-store bag and freeze.
5. When using the chicken in bento lunch boxes, microwave it first before packing.

I had some frozen commercial karaage bento, but I decided I wanted a fried dish that was lighter, so I added ginger and tried making tatsuta-age.
