Drain the yogurt. Peel the orange (including the thin, inner peel.)
Using a mixer, combine the drained yogurt, egg, sugar, flour, and half the orange.
Cut the remaining orange into small pieces. Finely chop some of the orange zest.
Line your container with parchment paper and pour in the mixture and orange from steps 2 and 3. Lightly cover or wrap, then microwave (300W) for 8 minutes.
Story Behind this Recipe
I made this cake before with cream cheese and it wasn't that great, so I tried it out with drained yogurt.
The cake will fall apart easily, so let it cool completely before taking it out of the container. If you can adjust the wattage of your microwave, please use a low setting. Please adjust the cooking time accordingly.
