Story Behind this Recipe

My family loves fried chicken so I make it often. I wanted to make fried chicken that goes well with rice, so I marinated the chicken with plenty of garlic and soy sauce.
I had shio-koji on hand because it was a trendy item to include in dishes at the time, but the chicken will be still delicious without it.
When I used it, I found that the chicken absorbed the flavours very quickly.
