Cut the chicken into your desired size. Add the seasoning ingredients and marinate for about 20 minutes.
Coat the chicken with the katakuriko and flour. Deep-fry in oil heated to 170℃ until golden brown, and it's done.

My family loves fried chicken so I make it often. I wanted to make fried chicken that goes well with rice, so I marinated the chicken with plenty of garlic and soy sauce. I had shio-koji on hand because it was a trendy item to include in dishes at the time, but the chicken will be still delicious without it. When I used it, I found that the chicken absorbed the flavours very quickly.
If you have time, marinate the meat overnight. It will absorb the seasoning flavors better and will turn out delicious. Marinate for a while if you're not in a rush.
