Pork Tsukune Patties with Lotus Root for Sports Day or Cherry Blossom Viewing

Tsukune are popular with people of all ages and are great to put in lunchboxes for sports days and other special events. These tsukune are filled with lotus roots that give it a texture similar to an actual hamburger. I paired them with a sweet and spicy sauce.

Ingredients: 3-4 servings

Thin green onions
1-2 stalks
Ground pork
200g
Lotus root
100g
Salt and pepper
a small amount
Katakuriko
1 tablespoon
Flower-shaped boiled carrot slices
2-3
◎Soy sauce
2 tablespoons
◎Mirin
2 tablespoons
◎White sesame seeds
as needed

Steps

1. Chop the green onion into thin rounds and the lotus root into 5 mm cubes. Mix these well with the ground pork, season with salt and pepper and shape into small bite-size patties.
2. Heat some vegetable oil in a frying pan and cook both sides of the patties.
3. Drizzle over some soy sauce and mirin from above, mix in and finish with a sprinkle of sesame seeds.
4. Pack these tsukune patties together with some flower-shaped carrot slices boiled in salt to create a lovely colourful lunchbox.

Story Behind this Recipe

When you're preparing a lunchbox for a sports day or other special occasion it's easier if most preparations can be completed the day before. You won't have much time on the actual day so I made these tsukune patties a small size to reduce the cooking time.
